Daily Ramadan Recipe

Dish: Lentil and Vegetable Sou

Ingredients:

  • 1 cup yellow lentils
  • 1 onion, chopped
  • 2 tbsp vegetable oil
  • 1 potato, finely chopped
  • 3 carrots, grated
  • 1 tsp cumin
  • 5 garlic cloves, minced
  • 1 tomato, peeled and chopped
  • 2 sprigs parsley, chopped
  • 5 cups hot water
  • ¼ tsp salt
  • ¼ tsp black pepper
  • A pinch of turmeric

 Preparation:

  • Wash the lentils and soak for 30 minutes.
  • Sauté onion in oil, then add lentils, vegetables, and garlic.
  • Add hot water and cook until the lentils and vegetables are tender. Adjust water if needed.
  • Blend the mixture until smooth, return to pot, and season with salt, pepper, cumin, and turmeric.
  • Garnish with chopped parsley and green onions before serving.
