Daily Ramadan Recipe
Dish: Lentil and Vegetable Sou
Ingredients:
- 1 cup yellow lentils
- 1 onion, chopped
- 2 tbsp vegetable oil
- 1 potato, finely chopped
- 3 carrots, grated
- 1 tsp cumin
- 5 garlic cloves, minced
- 1 tomato, peeled and chopped
- 2 sprigs parsley, chopped
- 5 cups hot water
- ¼ tsp salt
- ¼ tsp black pepper
- A pinch of turmeric
Preparation:
- Wash the lentils and soak for 30 minutes.
- Sauté onion in oil, then add lentils, vegetables, and garlic.
- Add hot water and cook until the lentils and vegetables are tender. Adjust water if needed.
- Blend the mixture until smooth, return to pot, and season with salt, pepper, cumin, and turmeric.
- Garnish with chopped parsley and green onions before serving.
