Energetic vibes meet a sunshine-filled restaurant overlooking the sea. Guests danced as the live band crooned American hits, filling the atmosphere with a punch of liveliness. The competitive spirit was soaring with games that won guests prizes. Now, that is an ideal wedding party!

Buffet stations featured a beautiful selection of delicacies from several nations; however; the live counters were dedicated to a wide selection of American favourites. If you love salads, you will enjoy the salad counter that has a wide range of fresh and colourful options. You will also find raw oysters and poached seafood, including a sushi selection if that suits your palate.

One thing I enjoy at weddings is the round of appetisers and drinks. Keeping with the festive spirit, I began with a plate of hot appetisers consisting of jalapeno cheese balls, onion rings, and a glass of chilled ginger ale. The flavor of the jalapeno cheese balls was as perfect as their spherical form. The golden and crunchy breaded coating revealed a smooth and creamy filling. The mild tanginess of the cream cheese spiced with jalapeno was a party in my mouth. The fizzy ginger ale perfectly complemented the fried bites. One of my favourites at this restaurant is the crispy crab rolls from the sushi station. The tempura batter fried rolls have a filling of imitation crab that tastes great with the spicy mayonnaise drizzle.

Plenty of appetising delights were found at the main course buffet and the live counters were a treat to the senses. I loved the oxtail with mashed potatoes and au jus and savoured the mouthfeel of the fall-apart-tender, fatty meat against the creamy mashed potatoes. I could not resist having a portion of mac and cheese, and it brought a smile to my face. The me l t ed cheese with soft macaroni and golden mozzarella topping was very comforting. The chicken parmesan in lemon butter sauce was tasty. Tender seared chicken paired with the lemon butter sauce was light and creamy with a lemony touch. With a similar flavour profile, the salmon with lemon butter dill sauce was equally delicious. The salmon was tender and its distinct flavour along with the creamy sauce was an ideal match.

Speaking of ideal matches, I found culinary treasures such as roast chicken with aromatic thyme sauce at the live stations. The juicy chicken with luscious sauce was warm and comforting. Another interesting combination was hot chicken and waffles- deep fried chicken bites served on top of fluffy waffles and drizzled with sweet maple syrup. Now that is a nice contrast between savoury and sweet. For seafood lovers, they have hot and freshly prepared fish and chips with tartar sauce. They also serve pork ribs with BBQ sauce and crispy pork belly. The crispiness of the crackling was sending sound waves across the hall!

For dessert, I opted for one of my own creations- Chocolate ice cream with a chocolate shell and feuilletine. Here is how you can create it at Hilton’s brunch: Ask the server for a scoop of chocolate ice cream, then head over to the chocolate fountain and spoon a generous helping of chocolate to cover the scoop of ice cream. Wait for a minute to see the magic. The chocolate will transform into a shell over the ice cream. Now add some feuilletine from the ice cream counter and enjoy!

The well-prepared and presented crème brulee won my heart. It had the perfect golden crackly caramel topping revealing a luxuriously creamy custard. The chocolate mud cake was rightfully served warm along with chocolate sauce. The colourful donuts looked tempting, but the chocolate mud cake completed my brunch experience. The food quality is uncompromised with a beautifully crafted menu. Everyone can find a dish to suit their taste buds.
