Celebrate a Sweet Eid - Eats and Treats by Tania Rebello

Sweets form an integral part of every celebration. Nothing can compare to the anticipation of a sweet treat at the end of a savoury meal. A sweetened festivity is always a joy to the senses.

Using seasonal ingredients in desserts is a great idea, and the tactical use of natural sweeteners in desserts is an art.

There is no shortage of dessert ideas as the internet is flooded with sweet recipes containing every ingredient you can think of. Malai Kulfi is a commonly enjoyed Indian frozen dessert.

This rich and creamy ice cream is traditionally prepared from milk, sugar, cardamom and nuts.

The mixture is simmered while continuously stirring to caramelise the sugar and reduce the milk. The resulting thickened cream is moulded and frozen to form kulfi.

Mango Kulfi is made extra special with sweet, ripe mangoes which you can easily find at local supermarkets in Bahrain.

The mango puree adds sweetness, reducing the need for added sugars, thereby producing a luscious, guilt-free and cooling treat. Prepare this summer delight and enjoy it with your friends and family during the Eid holidays.

MANGO KULFI RECIPE

Ingredients:

• 4 cups full fat milk + ⅓ cup extra

• 4 tbsp milk powder

• 4 tbsp sugar

• 1 cup mango purée (4-5 small mangoes)

Instructions:

• In a deep, heavy bottom pan, add 4 cups of full fat milk. Let this mixture come to a boil.

• In an electric grinder /mixer, add in mango chunks and sugar. Blitz this until it reaches a pureed consistency. Set this aside.

• In a small bowl, mix ⅓ cup of remaining milk with milk powder and combine the two. Once the milk has come to a boil, add this mix into the boiling milk, stirring continuously. Now reduce the heat and let the milk simmer until it is reduced to half its quantity.

• Once the milk has reduced down, transfer it into a clean bowl and let it cool down completely. Once cooled, mix in the mango puree.

• Pour the mango mix into kulfi moulds. Cover the mould with foil and stick in ice cream sticks.

• Refrigerate for 8 hours or overnight for best results!
